Why chocolate is a delivery system, not just a confection

Cocoa butter is one of the most useful carriers available for a cannabinoid. Here is the chemistry behind that, and why it makes chocolate a demanding medium to formulate in.

Ask most people what chocolate is and you will get an answer about flavour. Ask a formulator and you will get an answer about fat. Chocolate is roughly a third cocoa butter by weight, and cocoa butter is a remarkable material — which is the real reason it sits at the centre of what we build.

Cannabinoids follow fat

Cannabinoids are lipophilic. They associate readily with fats and poorly with water, and that single property drives most of the design decisions in edible cannabis manufacturing. A water-based product has to work hard to carry a cannabinoid evenly. A fat-based one is working with the chemistry rather than against it.

Cocoa butter is a fat with an unusually narrow and well-defined melting range. That is what gives chocolate its snap at room temperature and its clean melt in the mouth, and it is also what makes it a predictable medium to formulate into — predictable being the most valuable property a carrier can have.

The tempering constraint

Cocoa butter can crystallise into several different forms, and only one of them produces good chocolate. Tempering is the controlled heating and cooling cycle that encourages that form and suppresses the others. Get it right and you have gloss, snap and stability. Get it wrong and the product is soft, dull, and prone to developing a pale surface bloom over time.

Introducing a cannabinoid extract into that system changes how it behaves. The extract is itself an oil, and adding oil to a precisely balanced fat system affects crystallisation. This is why formulation and tempering have to be developed together rather than one after the other — a formulation that works in a beaker and fails on a moulding line is not a formulation.

Distribution is the whole problem

Here is the constraint that governs everything: once chocolate sets, whatever distribution existed in the liquid batch is locked in permanently. There is no correcting it afterwards, and no averaging across units. If the cannabinoid was unevenly dispersed when the batch was moulded, some units carry more than the declared amount and some carry less.

For a product declared at 1 mg per unit, that is not a rounding issue. It is the difference between an accurate label and an inaccurate one. Building the extract into the cocoa butter at the start, rather than adding it to finished chocolate, is how the problem is addressed at the source.

Flavour, without leaning on sugar

Cannabis extract has a character of its own, and the standard way to cover it is sugar. That works, and it produces a very sweet product. Working with the structure of milk chocolate, or with a sharp citrus like yuzu, is an attempt to balance the extract rather than bury it — a formulation decision rather than a masking one.

That is the case for chocolate in a sentence: it carries a cannabinoid well, it sets into a precise unit, and it gives a formulator something to work with on flavour. It is also genuinely difficult to do properly, which is the part we find interesting.
